Professional Cookery Intermediate Apprenticeship
Course Overview

Hospitality is part of the wider leisure, travel and tourism sector which needs to recruit 855,000 managers, chefs, waiting and bar staff and catering assistants by the year 2017 to replace those who leave or retire. The Industry is facing a number of key challenges to make sure that staff have the right skills and, once trained, that they stay and develop their skills to fulfil their career ambitions, contributing to increased productivity and business profitability.

These qualifications are aimed at those working or who are seeking to start a career in professional cookery. They can be taken whilst in the workplace to allow hands on experience as you train. They have been developed in association with People 1st, the Sector Skills Council for Hospitality, Leisure, Travel and Tourism and is based on the national occupational standards for the industry.

Level 2 NVQ Diploma in Professional Cookery: This is a flexible route allowing a wide selection of units, ideal for those who may not wish to handle certain food types. Level 2 NVQ Diploma in Professional Cookery (Preparation and Cooking): This covers a range of methods of preparing food from preparing ingredients through to cooking and presentation of dishes.

Progression

Learners may progress onto other Hospitality related qualifications such as the Level 3 Diploma in Hospitality Supervision and Leadership Skills (NVQ) or the Level 3 Diploma in Professional Cookery, both of which form part of an apprenticeship framework. If they are not already in employment, this qualification may enable learners to gain employment in the Hospitality Industry

Professional Cookery Advanced Apprenticeship

Progression

Learners can progress onto craft based qualifications at level 4; more senior positions within their employment or onto management qualifications, for example the Level 3 Diploma in Hospitality Supervision and Leadership Skills (NVQ), or other generic management qualifications.
